Creamy Lime Temptation
Spring has finally arrived and the warm temperatures
are sure to follow, that's why the Clifton Insider resident Chef
decided to share a favorite cool refreshing no bake dessert recipe,
"Creamy Lime Temptation". This blend of cool rich cream
and a touch of tangy citrus are perfect to enjoy after a barbecue
meal or as a cooling treat on a summer afternoon with family and
friends. Give it a try and see why we call it a temptation.
Graham Cracker Crust:
One sleeve graham crackers
One half cup melted butter
In food processor grind graham crackers, blend melted butter (similar
to cheese cake crust)
Add one tablespoon lime zest, blend.
Press into a 9" to 10" spring form pan.
Filling:
1 pound cream cheese, softened
Three Quarter cup fresh lime juice (about 6 to 10 limes depending
on size)
14 ounce can sweetened condensed milk
1 teaspoon finely grated fresh lime zest
In a food processor blend cream cheese, lime juice,
and condensed milk until smooth. Add zest and pulse just until combined.
Pour filling into shell. Arrange lime slices on top of pie. Chill
pie, loosely covered at least 6 hours and up to 1 day. Enjoy!
